Low Calorie Zucchini Banana Muffins

3/4 cup egg white, beat (or egg substitute)1/2 cup unsweetened applesauce1/2 cup fat-free margarine, melted2 cups zucchini, shredded2 ripe bananas, mashed2 tablespoons Sweet-10 (sugar substitute)2 tablespoons brown sugar1 teaspoon baking powder1 teaspoon baking soda1 teaspoon cinnamon1/2 teaspoon salt2 teaspoons vanilla extract2 cups whole wheat flour1/2 cup old fashioned oats
1. Preheat oven 350 degrees.
2. In a bowl combine egg, brown sugar, sugar substitute, apple sauce, and margarine.
3. To bowl add baking powder, baking soda, cinnamon,nutmeg, salt, and vanilla.
4. Add old fashioned oats and then flour slowly.
5. Add zucchini.
6. Beat mixture (by hand or mixer).
7. Put into foil baking cups.
8. Bake 35 minutes or until toothpick comes out clean.
Serving Size: Makes 24 muffins
