Berry Cream Muffins

Ingredients
4 eggs2 C sugar1 C extra light olive oil1 tsp vanilla4 C white whole wheat flour1 tsp salt1 tsp baking soda2 tsp baking powder2 C plain, lowfat yogurt2 C mixed berries, fresh or frozen
Directions
Beat eggs. Gradually add sugar. While beating, slowly add oil and then vanilla. Combine dry ingredients; add alternately with the yogurt. Fold in berries. Fill muffin cups 1/2 - 2/3 full. Bake at 400 degrees for 20 minutes.

Note: I usually get more than 24 muffins from this recipe.
