Lentil & Barley Salad

Ingredients
1 C dried green lentils1/2 C dried pearled barley1 C tomato, diced.5 C edamame, shelled3 T chopped cilantro1.5 T olive oilSalt & Black Pepper to taste (and any other herbs or spices--I use some dill and cayenne as well)
Directions
Cover lentils & barley overnight with water. Drain and transfer to a large bowl. Combine with other ingredients.
