Curried Pumpkin Soup

3 C. chicken broth1/2 C. onion, chopped2 T. curry powder1 C. pumpkin, canned1 C. coconut milk1 T. fresh sage leaves, chopped
Add chicken broth and onions to a 2 quart saucepan over medium heat. Simmer 5 minutes, until onions turn translucent. Add curry powder, blend well. Add pumpkin, stir well and simmer 10 minutes. Add coconut milk, stir well,a nd simmer 5 minutes. If you have one, use an immersion blender to puree the soup in the pan. This will blend the onions and spices more fully, and create a more velvety texture. Ladle into four soup bowls and garnish with fresh chopped sage. Serves 4.
