Broccoli Quiche Cups

Ingredients
1 lb pkg frozen broccoli1/4 cup chopped bell pepper1/4 cup chopped onion1 cup Egg Beaters3/4 cup 2% Shredded Cheddar1/4 cup part skim Mozzarella
Directions
Steam broccoli, peppers, and onion. Mix in Egg Beaters and cheeses. Spoon into non-stick silicone muffin pan sprayed with non-stick cooking spray. Bake about 25 -30 minutes at 350.
Makes 12 cups. I eat two for breakfast with a little teeny bit of 2% cheddar sprinkled on top.

    I love to make quiche and never thought to do it in a muffin pan, so I could eat it on the go. thanks for the tip.
