Vegetable & Egg Frittata

Ingredients
4 whole eggs3 egg whites1/2 cup Reduced fat Mexican Four Cheese blend2 cup frozen vegetables, thawed12 herb crackers, crushed1/2 tablespoon olive oil1/3 cup chopped red onion5 cloves roasted garlic
Directions
Blend together the cracker crumbs and oil olive. Press into pie plate and bake for 10 minutes at 350.

Beat together eggs and egg whites. Add salt and pepper to taste.

Mix together all vegetables and place on top of crust.

Pour egg mixture on top and bake for 15 minutes at 350.
Sprinkle cheese on top and bake an additional 5 minutes or until eggs are firmly set and a knife inserted in the middle comes out clean.
