Turkey Black Bean Enchiladas

Ingredients
1/2 pound ground turkey1/2 C Sweet peppers, diced1 Can of Enchilada sauce1 C Black Beans, rinsed and drained1/4 C Brown rice, cooked as directed1 C of shredded mozzarella cheese (divided)6 C Shredded Lettuce1 tomato, diced8 T Fat free sour cream
Directions
Brown Ground turkey and peppers in a non stick skillet.
Add 1/2 the enchilada sauce, black beans, brown rice & 1/2 C shredded cheese. Stir together and warm.
Assemble Enchiladas, place in baking dish.
Pour remainder of enchilada sauce over them and top with cheese. Bake in 350 oven for 30min.
To plate, place 2 C shredded lettuce on plate, place one enchilada on top of lettuce, top with 2 T FF sour cream and 1/4 of diced tomatoes.
