sausage& spinach, tortilla

Ingredients
2 Jenny-o turkey breakfast sausage1 small red potato, peeled and diced1 cup chopped fresh spinach1 tbs finely chopped onion1tsp olive oil3 egg whites1 large egg
Directions
boil diced potato til soft. Drain. sautee potato, onion, spinach and sausage until onion is soft and sausage is well cooked.( I precooked my sausages) beat egg whites and egg in a bowl till fluffy and pour over the other ingredients. allow eggs to set, then broil to finish the top. Slice in two. and enjoy.
