Quinoa Side Dish

Ingredients
1 cup dry quinoa2 cups vegetable broth1/4 teaspoon ground thyme2 teaspoons garlic, minced2 tablespoons parsley, minced1 cup onion, finely choppedJuice of one lemon, approximately 1/4-1/2 tablespoon, or to tastesalt & pepper, if desired (not included in nutritional facts)
Directions
Cook quinoa according to package directions, replacing water for vegetable broth. Stir in thyme. No need to add salt or butter, if the package instructs to do so. About 5 minutes before the cooking process for the quinoa is complete, stir in the minced garlic. Finish cooking as package directed until all water is absorbed.
In a bowl, Add onion and parsley. When quinoa is finished cooking; toss with onion and parsley. Season with salt and pepper, if desired. Sprinkle with lemon juice, toss again; serve and enjoy!
