Strawberry Ice Cream

Ingredients
1.5 cups heavy cream0.5 cup milk1 cup sugar1 pound of strawberries, washed and hulled1 tbs lemon juice4 egg yolks, lightly beaten
Directions
Mix strawberries, lemon juice, and 1/4 cup of sugar. Mash roughly and let sit while you prepare other ingredients.

Lightly Meanwhile, mix cream, milk, and remaining sugar in a sauce pan. Bring to a simmer. Remove from heat, and ladle a small amount of the hot cream mixture into the eggs to temper them. Slowly add the egg yolks to the cream in the saucepan while whisking. Put mixture back on low heat and cook for 5-7 minutes or until mixture thickens to coat the back of a spoon. Remove from heat.

Puree strawberry mixture and stir in cream mixture. Chill in fridge for 6-8 hours, or until mixture is completely cooled. Once cooled, prepare according to your ice cream maker's instructions.
