Chicken Picatta from Barefoot Bay

*Boneless/skinless chicken breasts, 32 oz (remove)*Bread Crumbs Panko, 3 cup (remove)Egg, fresh, 3 jumbo (remove)Parmesan Cheese, grated, .25 cup (remove)Garlic powder, 1 tsp (remove)Nutmeg, ground, .5 tsp (remove)*Flour, white, .5 cup (remove)Salt, .5 tsp (remove)Butter, salted, 0.25 cup (remove)Olive Oil, 0.25 cup (remove)Lemons, 2 fruit without seeds (remove)
Pound chicken breasts to make evenly thin pieces. I cut the breasts first. Mix flour, salt, garlic and nutmeg together. Beat eggs together and put in another dish. Crush panko crumbs more finely and add parmesan cheese.
Dredge chicken pieces in flour, then in egg, and finally in panko crumbs. Cook in med hot pan with small amts of butter and olive oil. Do not crowd the chicken. When golden, set aside to drain. Just before servinc grate fresh lemon zest on the chicken, and squeeze lemon juice over it. If serving with pasta, splash wine in your cooking pan when finished the chicken, add a bit more butter, then toss in your cooked pasta. This is NOT low calorie, but what a wonderful treat for a special occasion.
