Cauliflower Faux Fried "Rice"

Ingredients
1 lb (500g) raw cauliflower1/2 cup sliced green onions (scallions), separate while & green parts (3 whole scallions)3 tbsp soy sauce1 tsp minced garlic1/2 tsp ground ginger2 large eggs1 tbsp sesame oil1 tbsp vegetable oil
Directions
Use food processor with grate blade to shred cauliflower into rice like pellets.

In wok or large skillet, heat oil to medium high. Saute garlic and white part of onions for 1 min.
Add grated cauliflower and cook for 4-5 minutes stirring constantly.

Add soy, ginger and green onion tops . Stirfry for 1 min.

Push all to one side of pan or to outside edges.
Add little bit more oil to empty spot and pour eggs in.
Scramble eggs until set but still moist.

Stir-fry all together for 1 min. then remove from heat and enjoy!

Options: Add frozen peas/carrots and/or diced meat (ham, chicken, etc)
