* Silver Coho wild caught salmon, 18 oz (remove) * Maple Syrup, .25 cup (remove) * Ginger, ground, 1 tsp (remove) * *Lemon Juice, 2 fl oz (remove) * *Kikkoman Soy Sauce, 3 tbsp (remove) * Thai HOT Chili Sauce, 2 tbsp (remove)
In a small heavy saucepan simmer maple syrup, ginger, 3 tablespoons lemon juice, soy sauce, garlic, and salt and pepper to taste until reduced to about 1 cup, about 30 minutes, and let cool.
Put salmon, skin side down, in pan and brush with glaze. Season salmon with salt and pepper and roast in middle of oven until just cooked through, about 20 minutes at 350.
