Super Easy Split Pea Soup

Ingredients
1 pound dried cplit peas1 pound ham2 tbls olive oil1 cup chopped onion1 cup chopped carrots1 cup chopped celery4 cups vegetable broth2 cups water
Directions
Dice onion, celery & carrots. Heat olive oil in large pot then add the celery & onion. Saute for 5 minutes then add in the ham. Heat through and add the split peas and liquids. Heat to boiling then reduce heat and simmer for 1.5 hours. Stir occasionally. Add carrots and cook for about 30 more minutes until tender.

Makes about 11 - 1 cup servings.

    Very easy, very filling! This is great for a nice warm lunch or dinner. I added some salt to mine because I love salty soups. Also put in some seasoned croutons as an added filler. Will definitely make again! - 10/2/08
