Red beets with beet green salad (From Madhur Jaffrey)

Beets, boiled, 7 beets (2" dia, sphere) (remove) Beet greens, fresh, 4 cup (remove) Olive Oil, 3 tbsp (remove) *Horseradish, 2 tsp (remove) Garlic, 1 clove (remove) Cider Vinegar, .66 tbsp (remove)Salt, to taste
Boil beets and peel. Cut into slices.
Meanwhile, boil trimmed beet greens in salted water for about 10 mins or until soft. Drain. Mix remaining ingredients to make a salad dressing. Gently toss in a large bowl with the beets and greens.
