Black and Pinto Bean Salad with Lime and Cilantro Dressing

Ingredients: 1 can of black beans, drained1 can of pinto beans, drained1 medium bell pepper, diced1/4 cup vadalia onion, diced1 bunch (a good handful) of cilantrozest and juice of 1 lime1 clove of garlic2 Tablespoons extra virgin olive oil
Directions
Directions:
In a mixing bowl, combine the beans, onions, and peppers.

In a food processor, puree the oil, garlic, cilantro and lime juice until it forms a creamy dressing. Pour the dressing over the bean and pepper mix. Add the grated lime zest and toss.

Chill if desired.
