Sweet Potato Shepards Pie

Ingredients
1 tsp grapeseed oil2 cloves of garlic/minced1 med onion, chopped4 sweet potatoes or yams, fresh1 pound lean ground beef1 c slices mushrooms1/2 cup frozen corn1 c frozen green beans1 can fat free brown gravy
Directions
Heat oil in large skillet. Add minced garlic, onion and sliced mushroon. When onions are clear, add ground beef and brown, add salt/pepper to taste. While beef is browning, peel, slice and place sweet poatoes in sausepan of water. Bring to a boil cook until fork pierces easily, about 20 minutes.

When beef is browned, add frozen corn, green beans and gravy. Add contents to a casserole dish. When sweet potatoes are cooked, drain, return to pan and mash with an electric mixer or hand masher. Scoop sweet potatoes on top of meat mixture and spread completely covering meat. Cover casserole dish and place in 350 pre-heated oven for 30 minutes, or until bubbly.
