1 pound extra lean ground beef2 garlic cloves2 Tbsp chili powder1 tsp ground cumin1 (28 oz can) diced Rotel tomatoes1 can red kidney beans, rinsed and drained1 sweet onion, chopped1 (46 fl. oz.) can of tamato juice from concentrateSeason to taste
1. In a large nonstick skillet cook beef and garlic over medium heat, stirring with a wooden spoon to break up meat, until browned.
2. Drain meat and return to skillet.
3. Add chili powder and cumin; stir to combine.
4. Combine rotel tomatoes, beans, onions, and tomato juice in slow cooker.
5. Stir in beef mixture.
6. Cover and cook on high until the flavors are blended, 4-5 hours.
7. Add additional seasoning to taste.
Serving Size: Makes 12- 1 cup servings
