Egg White Breakfast Quiche Cups

Ingredients
1 (10 ounce) package frozen chopped spinach3/4 cup liquid egg whites1/4 cup Tri pepper blend, chopped1/4 cup diced onion1/2 cup chopped jalapeno1/2 teaspoon hot pepper sauce
Directions
1) Microwave the spinach for 2.5 minutes on high. Drain the excess liquid.
2) Spray a 12-cup muffin pan with olive oile spray.
3) Combine the egg, peppers, onion, spinach & pepper sauce in a bowl. Divide evenly among the muffin cups.
4)Bake at 350 degrees for 20 minutes, or until knife inserted in the center comes out clean.
