Low-fat Zucchini Pecan Bread

Ingredients
1 cup egg substitute1/2 c melted Smart Balance Lite spread1 TBSP vanilla1 c sugar3 c all-purpose flour1 tsp soda1 tsp baking powder1 TBSP cinnamon2 c grated zucchini with skinOptional:1/2 c chopped pecans1/2 c raisins
Directions
Pre-heat oven to 350. Spray two loaf pans with Pam spray.

Mix eggs, melted butter, and vanilla in a large bowl.

Add rest of ingredients and mix well.

Pour into Pam treated loaf pans.

Bake 60 minutes in pre-heated oven.

Serving Size: Makes two loaves, each sliced into 12 slices
