Mushroom Chicken

6 chicken legs, skin removed1 tbsp safflower oil, oleic (or any other oil, even spray)250 g mushroom250 g chopped tomatoe150 g chopped onionsalt and pepper to taste
1. In medium flame, heat the oil and add the chicken to a large pan for a couple of minutes, until the chicken is brown everywhere. Add salt and pepper to the chicken during the process.
2. Add the mushrooms and the onions and turn the flame low, stir occasionally until the onions are transparent.
3. Add the tomatoes and leave it for 20-30 minutes with very low flame. Stir occasionally.
Serving Size: Makes 6 small pieces or 3 big plates
