Stuffed Peppers (Genoese style)

Ingredients
Directions
1 large eggplant1 package Cabot's Sharp Cheddar Chesse Shredded3 eggs1 tbsp. Olive oil1/4 cup Bread crumbssalt & pepper12 bell peppers
cut eggplant.
Boil until soft.
Drain well and mash.
Place cheese into hot eggplant.
Add remaining ingredients
Cut peppers in halves
Stuff and place on baking sheet with 2 tbsp olive oil
Bake for 1 hour at 375
Serving Size: makes 24 peppers
