Ingredients
Directions
1 Medium sized head of cauliflower, chopped into small chunks1 can of Del Monte Diced New Potatoes (it is important to use the diced, because the other versions have more calories)Kraft Ranch Salad Dressing, 3 tbspKraft Parmesan Cheeses, grated, about 3 tbspSkim Milk, 1/2 cupSalt and Pepper to taste
Add the chopped cauliflower and the can of potatoes to a large bowl. Add about a cup of water, and cover. Microwave it for 15 minutes or until the cauliflower is soft.
Mash the mixture together, and add the rest of the ingredients. I usually use an immersion blender to make the mixture smooth, but if you like chunks, just mashing will be fine.
Ingredients can be modified to taste. Other additions include herbs, garlic, chunked or shredded meat, cheese, or pretty much anything else you would add to mashed potatoes.
