Carrot Ginger Soup

Makes 16 1-cup servings
Thinly slice onion
Saute until carmalized in 2 Tbsp olive oil, cracked blacked pepper and sugar.
Add fresh grated ginger after onions have browned.
Cut carrots and sweet potato into 1 inch pieces and cook until soft in chicken broth. About 40 minutes.
Add carmalized onions to carrots and sweet potates and blend in small batches until smooth.
Add one can of evaporated milk. (you may use nonfat to cut calories and fat)
Stir until combined and serve.
