Pasta with Sausage and Cherry Tomatoes

Olive Oil or Cooking Spray1/2 Pound of Pork Sausage2 Garlic Cloves18 Cherry Tomatoes1/2 Cup Spinach1 tsp Fresh Thyme1 tsp Extra Virgin Olive OilSalt & Pepper7 oz Linguine Pasta, Cooked Al Dente
Spray a large Skillet with Cooking Spray or Olive Oil and place over med-high heat. Add the sausage and stir occasionally for about 3 minutes. Add the Garlic, Tomatoes and Thyme, cook another 3-4 minutes, or when the Tomato skins burst. Add the Spinach, and heat until wilted or 2-3 more minutes. Add Salt & Pepper to taste.
Meanwhile, Boil Water and cook Linguine Pasta Al Dente. Strain, and rinse with cool water. Add Pasta to the Pan of Sausage and Tomatoes and mix to warm turn and take off heat, then serve.
