Ingredients
1-1/2 cups of unbleached, all purpose plour1-1/4 tsp. baking soda1 tsp. salt2 tsp. pumpkin pie spice1 can of pumpkin puree (I use Libby's)1 cup firmly packed brown sugar1/2 cups fat free buttermilk1 large egg1 Tbsp. canola oil1/4 cups semisweet chocolate chips
Directions
1) Preheat oven to 350 degrees.
2) Spray loaf pan with nonstick cooking spray.
3) Mix the flour, baking soda, salt, and pumpkin pie spice together in a small bowl.
4) In a large bowl beat the pumpkin puree, brown sugar, buttermilk, egg, and oil together. I do it by hand but you could use an electric mixer.
5) Add the dry ingerdients to the wet gradually, stirring until just moistened, do not over mix.
6) Fold in the chocolate chips.
7) Pour into loaf pan and bake for 1 hour.

By the way...I just used a normal loaf pan, like what most people would use to bake bread in.
