Adie's Spinach, Tomato, Pepper & Turkey Omlette

Ingredients
1 cup Egg substitute (I used Egg Beaters)Approx 7 leaves fresh Spinach1/4 cup fresh Tomatoes, chopped1 small sweet orange pepper, approx 100 gramTurkey breast meat, 2 slices1.5 Mini rounds of Baby Bell Light Cheese, crumbled
Directions
Cut up tomato and pepper into small, bite size pieces and cook in a small non-stick skillet until at desired tenderness.
Add egg beaters to pan and cook until partially solid, then add spinach and turkey.
Once mostly solid, sprinkle cheese on top and allow to melt.
Fold omlette in half and remove from pan
Makes 1 Omlette
