Bacon, Cheddar, Artichoke heart Quiche

1/2 cup chopped onions1/2 cup bacon bits1/2 cup artichoke hearts1 tsp olive oil2 large eggs1/2 cup egg replacer1/2 cup all purpose flour1/2 tsp baking powder1/4 tsp salt1/2 tsp herbs (I use 21 salute from Trader Joes)1 1/3 cup milk2 oz reduced fat cheddar cheese, grated (1/2 cup grated)
1. Heat oil in nonstick pan on medium high heat. Add onion, bacon bits, artichoke hearts and saute about 3 minutes. Take off heat and set aside.
2. In bowl whisk together eggs, egg replacer, baking powder, flour, salt, seasonings, and milk until smooth. Add about 1/2 of the cheese. Add in onion, artichoke hearts and bacon bits, mix together.
3. Pour into pie pan sprayed with cooking spray. Top with remaining cheese.
4. Bake at 400 degrees for about 20 - 25 minutes, until set in middle.
5. Remove from oven and let rest about 5 minutes.
