Pecan Pie Muffins

1 cup chopped pecans1/2 cup plain flour1/2 cup Splenda Brown Sugar1/2 cup Food Lion Egg Mates1/2 cup I Can't Believe It's Not Butter Spray1 teaspoon Vanilla Flavoring
Preheat oven to 350 degrees
Mix pecans, flour, and Splenda Brown Sugar in a bowl and set to side
Mix Food Lion Egg Mates, I Can't Believe Its Not Butter Spray, and Vanilla Flavoring and then add dry ingredients. Mix well with electric mixer
Pour into muffin pan sprayed with no calorie cookie spray --about 2/3 full
Bake 20 to 25 minutes Delicious

I just made these tonight,was a bit leery of the batter as it was so runny but resisted the urge to add anything,also thought 1 whole cup of pecans was a lot,but was really nervous when I had to reassign some of the batter to = 12 servings..All that said, taste was good, looks, not so much - 10/31/13
