Whole Wheat Oatmeal Banana Pancakes

Ingredients
1 cup uncooked rolled oats1.5 cups whole wheat flour2 tsp baking powder1/2 tsp baking soda1 egg2 cups nonfat milk1 tsp vanilla extract1 cup banana (approx 4 medium-sized bananas)
Directions
1. In blender, mix oatmeal on high speed until it looks like coarse flour.

2. Add flour, baking powder and baking soda to oats in blender. Mix together on low speed. Once combined, pour dry mixture into a large bowl.

3. Place bananas in blender and blend on high speed. Then add egg, milk and vanilla and blend on low speed.

4. Add the wet mixture to the dry mixture in the bowl and combine well with a large spoon.

5. Let the batter rest for at least 5 minutes.

6. Heat a griddle or pan to medium-high heat. Coat lightly with cooking spray (I use Pam with Olive Oil.) Drop 1/4 cup batter on to hot griddle and cook each pancake about 2 minutes on each side.

6. Serve hot with favorite toppings. (I like Smart Balance oilve oil spread and Log Cabin All-Natural syrup.)
