Black Eye Pea Salad

Ingredients
3 16oz cans of Bush Black Eye Peas2 oz Pimentos, drained1/2 cup of purple onion, chopped1 cup celery, dicedDrain Peas. Add chopped Pimentos, onions, celery. 2/3 cup sugar2/3 cup cider vinegar1/2 cup olive oil1 tsp salt1/2 tsp black pepper1-2 cloves of garlic, minced Combine sugar, cider vinegar and olive oil. Add salt, pepper and minced garlic. Pour dressing over peas and marinate overnight. Drain the dressing and serve.
