3 cups sliced fresh or frozen rhubarb1 cup cubed peeled apples1 cup sliced strawberries1 cup blueberries1/3 cup white sugar or Splenda1/2 tsp. ground cinnamon1/2 cup all purpose flour (or gluten free flour blend)1 tsp. baking powder1/4 tsp. salt4 TBSP butter or margarine2/3 cup packed brown sugar (or Splenda Brown Sugar baking blend)2/3 cup quick cooking oats
Combine all fruit, spoon into a greased 8" square baking dish. Combine sugar and cinnamon; sprinkle over fruit mixture. Set aside.
In a bowl, combine flour, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in brown sugar and oats. Sprinkle over fruit mixture.
Bake at 350F for 40-50 minutes or until lightly browned.
Serve warm or cold.
