Lower fat corn muffins with strawberries

1 cup whole wheat flour1 cup whole grain cornmeal1/4 c sugar1/2 tsp salt2 tsp baking powder1 egg3 Tbsp olive oil1/4 c applesauce1 c vanilla soy milk24 strawberries
Preheat oven to 400 degrees.
Mix whole wheat flour, cornmeal, salt, sugar, and baking powder until combined.
Add wet ingredients (egg, olive oil, applesauce, soy milk) to dry.
Spoon batter into prepared muffin tin. Place two strawberries on top of each muffin.
Bake 20 minutes or until a toothpick comes out clean.
Serving Size: Makes 12 muffins
