Slow-Cooked Buffalo Vegetable Sauce

1 lb ground bison2 lg cloves garlic, minced3 medium tomatoes 1 medium zucchini2 small summer squash2 Tbsp dried basil (may use fresh if you have it)1 tsp dried oregano (may use fresh if you have it)1 (11.5 oz) can low sodium V8
Heat a skillet over medium heat. Add bison and minced garlic; saute until meat is no longer pink. Set aside. Wash tomatoes, cut in half and then into thin wedges. Wash zucchini and squash; cut in half lengthwise and then slice into 1/4 inch slices. Place squash in bottom of crock, then tomatoes and meat mixture. Add spices. Pour V8 over entire mixture. Cover and cook for 6-8 hours on LOW. Serve over pasta (not included in nutrition info).
