Brocolli - approx 2.5 cupCauliflower - approx 2.5 cupOnion - approx 1 cupGarlic - 1 clovePotato - approx a pound or 500 gVeggie broth - about 4 cups (homemade is best!)Water - optional, use if too thick!Half-fat cream of brocolli soup - 1 canCheddar cheese, shredded - 1 cup or lessmushrooms - 1 cup
Sautee the onion and garlic in some of the vegetable broth. Add other vegetables (except mushrooms!) and the rest of the broth. If too thick, add some water. Boil and cook for about 15 minutes, until they are soft. Once the vegetables are cooked, blend with a hand blender or a blender in batches. Add the can of soup, cheese and mushroom and heat through.
