Cranberry-Orange-Apple-Celery Relish

16 oz. (1 bag) cranberries1 large navel orange1 large apple1 large celery stalk2 T. fresh grated orange peel1/2 c. Splenda
Wash cranberries, remove squishy ones. Peel orange, part in sections. Wash apple, cut in quarters and remove seeds. Scrub celery and cut in quarters.
If you have a food processor, chop and blend the fruit and celery. If you have only a blender, it will take longer: chop orange, apple, and celery by hand and then whirl in blender with cranberries, a handful at a time. In a bowl, mix with grated orange peel and Splenda. Keep in refrigerator till ready to serve.
If you can make this a day or two before Thanksgiving or Christmas dinner, it will be even more eye-catching (the color deepens) and delicious.
Makes 10 1/2-cup servings.
