Crock Pot French Dip (Meat Only)

Ingredients
2.5-3 pound lean beef roast, trimmed2 T olive oilsalt and pepper2 packages (1 oz each) dry beefy onion soup mix32 ounces beef stock1.5 cups water
Directions
Heat oil in large stockpot over medium high heat. Rub roast with salt and pepper. Sear roast on all sides to seal in juices.

Place in crockpot and sprinkle with soup mixes. Pour water and beef stock over roast.

Cook 8-10 hours on low.

Serve on rolls with or without cheese. May broil open-faced in oven to toast bread and melt cheese. Ladle juices into small cups for dipping.
