Ginger Salad Dressing

Ingredients
1/2 c minced onion 1/2 c peanut oil 1/3 c rice wine vinegar 2 tbsp water 5 tbsp fresh minced ginger (or more, to taste) 2 tbsp minced celery 2 tbsp ketchup 4 tsp low-sodium soy sauce 4 tsp Splenda 2 tsp fresh lemon juice (or more, to taste) 1/2 tsp fresh minced garlic (about 1 small clove) 1/2 tsp salt1/4 tsp ground black pepper
Directions
Combine all ingredients in a blender/food processor and blend until very smooth.

Refrigerate immediately and store for up to a week (if it lasts that long!).

Makes 14-2 tbsp servings (1 3/4 cups total).
