Roasted fingerling potatoes

Ingredients
1 bag approximately 1.5 cups fingerling potatoes2 TBSP olive oil4 tsp fresh thyme or to taste1tsp lemon zest1/2 tsp sea salt
Directions
wash fingerling potatoes, lay in baking dish and drizzle with olive oil, don't crowd your potatoes. Drizzle with olive oil, roast at 350 degrees approx 20-30 min, turning half way through.
When the potatoes are done, test them with a fork, toss in the salt, thyme and lemon zest right before serving.
