Vegan Carrot Raisin Walnut Muffins

Ingredients
1 1/2 c whole wheat pastry flour1/4 c. sugar2 tsp baking powder1/2 tsp baking soda1 tsp salt1 tsp cinnamon1/2 c. almond milk (or soy or rice)3/4 c. unsweetened applesauce1 tsp vanilla1/2 c. raisins2 c. grated carrot 1/2 c. chopped walnuts
Directions
In a large mixing bowl, sift together dry ingredients and sugar (flour, baking powder, baking soda, salt, cinnamon, sugar). Then make a well in the center of the bowl and add almond milk, applesauce and vanilla and mix until "just mixed". Add carrots, raisins and nuts and fold them in until uniform.

Fill muffin tins 3/4 of the way, then bake for 18-22 minutes or until a toothpick or knife come out clean.
