Spelt, Oat n' Whey Pancakes

1/2 cup rolled oats1 3/4 cup milk1 1/4 cup spelt flour1/2 cup Whey Protien Isolate, plain2 tbsp cane sugar1 tbsp baking powder1 tbsp hemp seed hearts1/2 tbsp salt1/2 tsp cinnamon, ground2 eggs3 tbsp oil (set aside 1 tbsp for griddle)1 tbsp vanilla extract
1. Combine oats and milk, let stand 5 minutes.
2. Mix flour, sugar, whey powder, baking powder, hemp seed hearts, salt and cinnamon in medium bowl.
3. Beat eggs, oil and vanilla in seperate bowl, and combine with oat mixture.
4. Pour oat mixture into flour mixture and blend until moisteded. Do not over mix, mixture should be lumpy.
5. Use set aside oil and brush over griddle, pour pancake mixture and cook as desired.
Serving Size: makes 10 larger pancakes
