Mexican Breakfast Taco for One

Ingredients
1/2 cup egg substitute 1/2 slice provolone cheese, torn into pieces1/4 of an avocado, chopped1 white corn tortilla 1 tbsp smokey chipotle taco sauce
Directions
Heat up your corn tortilla by laying it over (NOT in) the toaster and "toast" it a few times.
While this is happening, heat a small frying pan over medium heat, spray with cooking spray or use a drizzle of olive oil.
When pan is heated, add the avocado.
Let the avocado cook for about 30 seconds and gently stir. Add the egg substitute and scramble with the avocado.
When done to your liking take off heat and out of the pan. Sprinkle with cheese, drizzle with taco sauce (the Smokey Chipotle is really, really awesome) and put what you can in the tortilla....eat the rest with a fork.
YUM!!!!! and it will keep you full for hours for about 230 calories.
