Gluten Free Meatloaf

Ingredients
2 Tbl. extra virgin olive oil1 small onion, chopped1 carrot, grated1 clove garlic, grated2 lbs. ground beef3/4 cup ketchup2 large eggs, lightly beaten1 cup gluten free rice cereal crumbs1 Tbl. finely chopped fresh oregano1 Tbl. finely chopped fresh parsleysalt and pepper
Directions
In a skillet, heat the olive oil over medium heat. Add the onion and carrot and cook until softened, about 5 minutes. Add the garlic and cook about 1 minuted. Let cook.
In a medium bowl, combine the beef, 1/2 cup ketchup, eggs, cereal cumbs, onion mixture, parsley, oregano, 2 teaspoons salt and 1 teaspoon pepper. Transfer to the prepared pan, rounding the top. Spread the remaining 1/4 cup ketchup on top. Bake until cooked through, about 1 hour. Let sit for about 10 minutes.

    If 2 pounds of ground beef are used and there are 4 servings, plus all the other ingredients, there is no way it comes in at 60 calories and no protein!
