2 cans garbanzo beans, rinsed & drained16 oz. frozen green beans1 can light coconut milk28 oz. can diced tomatoes2 c. diced sweet potatoes1 c. diced onions3 c. diced carrots3 cloves garlic2 TB curry powder1 tsp. turmeric1 TB fresh grated ginger
Mix together and add to crock pot-- cook on low 4-6 hours.
