Robin's Potato leek soup

Ingredients
3 leeks4 c chopped potatoes8 c liquid (4 cups chicken broth and 4 cups water if you like)1 c chopped broccoli6 tbsp of whipping cream (35%)salt and pepper to taste
Directions
Slice leeks and soak in water for a minute to get off any loose soil. Peel and chop potatoes and broccoli. Add vegetables to chicken broth and water and simmer roughly 50 minutes until vegetables are tender. Then run through blender or use hand immersion blender to puree the soup somewhat. Add cream and stir. Add your salt and pepper to taste.

Serving Size: Makes 12- 1 cup bowls
