Beef-Lentil Soup

Ingredients
Prep instructions:Artichokes: Before preparing soup, thaw artichokes and toss with 1 TB olive oil. Roast artichokes in a 400 F (200 C) oven for 30-45 minutes (until edges are golden).Lentils are prepared: I use Trader Joe's pre-cooked French Lentils (easy, delicious)Dice 1 large onion (small dice)Thaw spinach; do not drainBrown beef in a large nonstick skillet over medium heat. Drain and set aside. (10 minutes to cook; )
Directions
Use remaining 1 TB oil to coat 6-8 quart soup pot. Cook onion over medium heat until translucent, stirring occasionally (4-6 minutes). Add browned beef and combine. Add remaining ingredients and combine. Simmer over low heat for 60 minutes.

Optional to serve with a dollop of sour cream and 6-10 slices of black or green olives.

Freezes nicely.
