Mashed potato soup

Ingredients
2 TB onion1/2 cup diced celery1/2 cup diced cauliflower1 TB butter1 can cream of chicken soup2 cups milk2 cups mashed potatoes1/4 tsp pepper1/4 tsp parsley3 slices cooked bacon, crumbled
Directions
Saute first three ingredients in butter until softened.

Add the rest of the ingredients, cook on med-high, stirring often, until it boils. Reduce heat to low, simmer for at least 10 minutes more.

Add more bacon and shredded cheese to the top, if desired (not included in nutrition info!) Tastes just like restaurant soup!

Makes 4 1.5-cup servings.

    Really good and very easy. I now have a go-to recipe for leftover mashed potatoes. I made minor modifications based on availability and personal preferences. Carrots instead of cauliflower, ham instead of bacon, and cooking spray instead of butter to saute. I also used 1 cup as the serving size. - 4/15/09
