Jello & Juice holiday Mold

2 1/2 cups of boiling water1 package (8 serving size) or 2 pkg. (4-serving size each) Jell-o brand Strawberry flavor gelatin, or any red flovor. I used sugar free Jello1 cup cold orange juice or cranberry juice cocktail 1 can (8 oz.) pineapple chunks , drained1 can (11 oz.) mandarin orange segments, drained
stir boiling water into gelatin in large bowl at least 3 minutes until completely dissolved. Stir in cold juice. Refrigerate about l 1/2 hours or until thickened (spoon drawn throough leaves definite impression.)
Stir in fruit. spoon into 6 cup mold sprayed with not stick cooking spray.
Refrigerate 4 hours or until; firm. unmold . garnish as desired. Makes 10 servings,
note : do not use fresh or frozen pineapple, kiwi, papaya or guava juice. gelatin will not set.
