Pasta with Eggplant and Tomato sauce

Ingredients
6oz Whole wheat pasta (3 cups cooked)1 Eggplant1 cup Tomato Sauce1 Fresh tomato3 tbsp pine nuts3 tbsp olive oil3 tsp garlic3 tsp OreganoSaltPepper3 tbsp grated Parmesan cheese
Directions
Cut the eggplant into cubes and chop tomatoes.

Combine all ingredients except pasta, pine nuts, and cheese and cook in a large skillet until eggplant is browned.

Cook pasta according to directions on the package.

Put sauce over pasta and sprinkle on cheese and pine nuts.

    i love this healthy and filling pasta. instead of tomato sauce and cheese i just add canned tomatoes and low fat milk and let it simmer for 30 min on low heat. - 8/11/11
