Roasted Turnips and Carrots

Ingredients
1 cup turnips, cubed1 cup carrots, chopped1/2 of a medium red onion, cut into 4 pieces1/2 tablespoon olive oil1/4 teaspoon packed brown sugardash of salt1/4 tablespoon of balsamic vinegardash of pepper
Directions
1. Preheat oven to 450 degrees.

2. Combine first six ingredients in a bowl. toss to combine and coat.

3. Spread mixture on a shallow roasting pan.

4. Bake for 1 hour, stirring after 30 minutes.

5. Add vinegar and pepper, tossing to coat. Serve.

Serving Size: makes 2 servings (approximately 1 cup)
